CSA Box Makes: Butternut squash soup and sandwiches

From this CSA box, I used the butternut squash, leeks, and onion in a butternut squash soup recipe from Bouchon by Thomas Keller (link here). The soup was excellent, and I just did away with the creme fraiche, bouquet garni, and freshly grated nutmeg to keep it simple.

As good as the soup was, next time I get a butternut squash I'm going to just roast it plain, brushed with some oil. I tasted the leftovers from the roasted squash, and it was just lightly sweet and delicately flavored. I wanted to have more, except most of the flesh went into the soup.

Along with the soup, I used the romaine lettuce in sandwiches - here inside of a cheese focaccia I made (very easy recipe from King Arthur Flour, here), and some chicken cold cuts. A satisfying autumn lunch.
